Carrot and yellow beet soup

Yellow is sexy – and healthy! This beautifully bright yellow-orange, low-histamine yellow beet and carrot soup provides a colorful and delicious change on the plate.

Ingredients for 2 servings

  • 6 carrots
  • 2 yellow beets
  • 1 onion (1)
  • 1/2 tsp turmeric
  • 2 cloves of garlic (1)
  • 1/2 tsp rock salt
  • 500 ml water

  • Peel the yellow beets and cook them together with carrots and the remaining ingredients in a pot of water for about 10 minutes.
  • Then blend and enjoy.

You can also make this recipe with beetroot. If you don't have fresh beetroot, you can carefully try the pre-cooked version. A slice of organic whole-grain bread goes perfectly with the soup.
