Oven-baked ratatouille with rice

Ratatouille – a delicious dish from French cuisine. Unfortunately, the original version with tomatoes and eggplant isn't suitable for a low-histamine diet. That's why we've adapted this oven-baked ratatouille to be low-histamine. It's very easy to prepare and absolutely delicious. Vie ta vie!

This recipe is

Preparation time 

20 minutes + 20 minutes baking time  

Ingredients for 2-3 people 

  • 1 onion (1)  
  • 1 clove of garlic (1)  
  • Olive oil  
  • Salt  
  • 100g rice  
  • 200ml water  
  • Fresh basil  

Oven-baked ratatouille with rice

preparation 

  • Preheat oven to 220°C (top/bottom heat).  
  • Wash the zucchini and cut into cubes.  
  • Wash, clean, and dice the bell peppers.  
  • Peel and finely chop the onion and garlic.  
  • Wash rice  
  • Mix all ingredients except the basil in an ovenproof dish and bake in a preheated oven for about 20 minutes.  
  • Wash and finely chop the basil.  
  • Remove the dish from the oven, stir in fresh basil, and serve.  

Our HistaFood tip  

You can also prepare this low-histamine ratatouille without rice. Simply omit the water. For added flavor, you can use 2 teaspoons of HistaFood organic vegetable broth , whether you're using rice or not.
