Vegan carrot stew
Autumn is the time for warming stews and soups. With this recipe, you can prepare a quick vegan and low-histamine carrot stew.

Ingredients for 1-2 people
- 300 g carrots
- 300g potatoes
- 1 onion (1)
- Salt
- 300 ml HistaFood Organic Vegetable Broth
- 1 tbsp olive oil for cooking
- ½ bunch fresh parsley
preparation
- Peel the carrots and potatoes and cut them into bite-sized pieces.
- Peel and dice the onion.
- In a pot, mix carrots, potatoes, onion, salt, HistaFood organic vegetable broth and cooking olive oil and bring to a boil.
- Reduce the heat to medium and let it simmer for about 20 minutes.
- Wash the parsley, chop it finely and add it to the pot.
- Remove the stew from the heat and serve.
