Vegan carrot stew

Autumn is the time for warming stews and soups. With this recipe, you can prepare a quick vegan and low-histamine carrot stew.

Preparation time   

30 minutes  

Ingredients for 1-2 people 

  • 300 g carrots  
  • 300g potatoes  
  • 1 onion (1)  
  • Salt  

Vegan carrot stew histamine preparation   

  • Peel the carrots and potatoes and cut them into bite-sized pieces.  
  • Peel and dice the onion.  
  • In a pot, mix carrots, potatoes, onion, salt, HistaFood organic vegetable broth and cooking olive oil and bring to a boil.  
  • Reduce the heat to medium and let it simmer for about 20 minutes.  
  • Wash the parsley, chop it finely and add it to the pot.  
  • Remove the stew from the heat and serve.

You can also freeze the soup and thaw it directly in the pot with a little water when needed. It's also perfect as a to-go soup in a thermos mug for when you're out and about or at the office.
