Rice and apple fritters

These vegan rice and apple fritters are guaranteed to delight the whole family. They're perfect as a dessert, a sweet lunch, or a snack on the go. 

This recipe is

Preparation time  

30 minutes  

Ingredients for 2-3 people 

  • 150g Basmati rice 
  • 50g rice pudding 
  • 2 tbsp coconut blossom sugar 
  • 400ml water 
  • 2 apples 
  • 4 tablespoons cornstarch 
  • coconut oil 

Dip: 

  • applesauce or almond butter (1)

Vegan apple and rice fritters

preparation  

  • Cook basmati rice and rice pudding with 400ml of water and then let it cool slightly. 
  • Wash, peel and finely grate the apples. 
  • Knead together the rice, apples, cornstarch and coconut blossom sugar, then form into small fritters. 
  • Heat coconut oil in a coated pan and fry the fritters until golden brown on both sides. 
  • Serve with almond or applesauce.
