Vegan broccoli gnocchi

You absolutely have to try these low-histamine broccoli gnocchi! The recipe is super quick to prepare and doesn't require any potatoes.

Preparation time  

30 minutes 

Ingredients for gnocchi 

  • 200g spelt flour 
  • 600g broccoli 
  • 2 tbsp cornstarch 
  • 2 tsp salt

preparation 

  • Wash the broccoli and divide it into florets. 
  • Place the broccoli florets in a pot. Cover with water and simmer until tender. Then drain, mash, and let cool. 
  • Knead spelt flour, broccoli, cornstarch and salt into a dough (this will be very sticky and can remain as is). 
  • Bring a pot of water to a boil, then reduce the heat to the lowest setting. 
  • Using a teaspoon and moistened hands, form small gnocchi and add them to the boiling water. 
  • Let the gnocchi cook in it until they float to the top. 
  • Strain and set aside 
  • Heat olive oil in a pan and fry the gnocchi in it. 
  • Add pine nuts and fresh basil, season with HistaFood organic herb salt and serve. 

Our HistaFood tip 

When preparing the gnocchi, you can also knead 100g of grated mozzarella into the dough and then fry them in butter instead of olive oil.
