Green asparagus salad with almonds

Ingredients

  • 1 pack of green asparagus
  • 50g salted almonds (1)
  • 6 tablespoons olive oil
  • 2 tbsp cranberry juice
  • 1/2 bunch of parsley
  • 1 clove of garlic (1)
  • Olive oil

preparation

  • Chop the asparagus into small pieces and briefly sauté in a pan with oil.
  • Chop the salted almonds (1) finely, mix a dressing from olive oil, cranberry juice, garlic (1) and salt, arrange everything and enjoy.

Instead of salted almonds, you can also simply use blanched almonds; these are usually even better tolerated.
