Coconut energy balls

These wonderfully delicious coconut energy balls are a hit with the whole family and are very quick to prepare! They are low in histamine and a tasty snack alternative for on the go.

This recipe is

Ingredients for approximately 20 balls

  • 4 dates or 2 tbsp date syrup
  • 4 tbsp coconut butter (1)
  • 100g coconut flakes (1)
  • 100g ground almonds (1)
  • 50g chopped almonds (1)
  • 2 tablespoons of water
  • 4 tbsp agave syrup
  • 1 tbsp coconut flakes (1) for coating

preparation

  • If you are using dates, puree them with a little water to a fine paste.
  • Knead coconut butter (1), coconut flakes (1), ground almonds, chopped almonds, water, agave syrup and date puree or date syrup into a smooth mixture.
  • Form about 20 balls and roll them in coconut flakes (1).
  • Store in an airtight container in the refrigerator

You can also create a colorful coconut ball plate from the coconut balls. To do this, divide the mixture into 4 portions and mix each with 1 teaspoon each of barley grass powder, turmeric, and wild blueberry powder. Leave 1/4 of the mixture plain.
