Chicken breast with red cabbage and potatoes
Pure red cabbage love! Did you know that 100g of red cabbage contains as much vitamin C as the same amount of lemons? This herb is also rich in iron and vitamin K.

Ingredients for 2 servings
- 1/2 red cabbage
- 6 potatoes
- 2 chicken breasts
- 2 spring onions (1)
- 300 ml apple juice
- 1/2 tsp cinnamon
- 1/4 tsp ground caraway
- 2 carnations
- 1 star anise (1)
- 1 juniper berry
- 1 bay leaf
- Salt

- Olive oil

preparation
- Cook the potatoes for about 20 minutes, then peel them.
- Meanwhile, wash the red cabbage and cut it into thin strips.
- Fill the spices into a tea bag / tea infuser and simmer together with the red cabbage, apple juice and a little salt with the lid closed for about 20 minutes.
- Wash the chicken breasts well, pat dry and sear in a pan with cooking olive oil.
- Arrange everything on a plate and season with organic herb salt . Alternatively, you can also prepare the recipe with, for example, feta (1) or halloumi.

Please only use fresh red cabbage, as red cabbage from a jar often contains ingredients such as vinegar, which are rather unsuitable for those with histamine intolerance.
