Cucumber bites

With this recipe, you can whip up delicious low-histamine cucumber appetizers in no time. They are perfect as a side dish for barbecues, as a snack, or for a low-histamine buffet.

Ingredients for 1-2 people

  • 1-2 cucumbers
  • 1 red pointed pepper
  • Sesame (1)
  • Fresh parsley

Cauliflower Hummus

  • 1 cauliflower
  • 2 cloves of garlic (1)
  • 2 tbsp tahini (1)
  • 3 tablespoons acerola juice
  • HistaFood Herb Salt

Cucumber bites

preparation

  • Wash and trim the cauliflower, separate the florets from the stalk, and cook in a pot with 1 liter of water for about 10 minutes until tender.
  • Wash the cucumbers and cut them into bite-sized pieces.
  • Scoop out the inside with a small spoon.
  • Wash the bell peppers and cut them into small pieces.
  • Wash the parsley
  • Drain the cauliflower and finely purée it with garlic, tahini, acerola juice and salt.
  • Fill cucumbers with cauliflower hummus
  • Garnish with bell peppers, parsley and sesame seeds.
