Pomegranate-Coconut Ice Cream

With this recipe, you can have a super delicious and refreshing ice cream in less than 5 minutes. A tasty treat that the whole family will love!

2-3 minutes  

Ingredients for 1-2 people  

  • 1 pomegranate seeds (frozen) (1)
  • 3 tbsp coconut milk (1) (from the can, the creamy part)  
  • 1 tbsp maple syrup  

Pomegranate-Coconut Ice Cream preparation 

  • For this recipe you can use frozen pomegranate seeds or freeze pomegranate seeds yourself overnight.  
  • Mix the frozen pomegranate seeds with 3 tablespoons of coconut milk (1) and maple syrup and serve immediately. The coconut milk (1) will freeze instantly and become a delicious ice cream.

For a low-fructose version, you can use frozen blueberries, apricots or blackberries instead of pomegranate seeds.
