Baked sweet potato with asparagus
A great combination of creamy and crunchy. Easy to prepare and delicious.

Ingredients for 2 servings
- 2 sweet potatoes
- A plant-based quark alternative (1)
- 4 green asparagus spears

- Pierce the sweet potato with a fork and bake in the oven at 180 degrees for 45 minutes.
- Meanwhile, quarter the carrots lengthwise and fry them together with the asparagus in a pan with olive oil and salt.
- Remove the potato from the oven, cut it open and fill it with a plant-based quark alternative (1), olive oil, salt and the vegetables.
- Garnish with a little cress.
