Baked sweet potato with asparagus

  • Pierce the sweet potato with a fork and bake in the oven at 180 degrees for 45 minutes.
  • Meanwhile, quarter the carrots lengthwise and fry them together with the asparagus in a pan with olive oil and salt.
  • Remove the potato from the oven, cut it open and fill it with a plant-based quark alternative (1), olive oil, salt and the vegetables.
  • Garnish with a little cress.
