Spelt spiral pasta with colorful vegetables

Ingredients for 2 servings

  • Spelt spirals
  • 2 carrots
  • 1 zucchini
  • 1 clove of garlic (1)
  • 1 onion (1)
  • 1/4 red cabbage
  • 1/2 head of broccoli
  • oregano
  • thyme
  • Oat cream cheese (1)
  • Olive oil
  • HistaFood Organic Herb Salt
Recipe

preparation

  • Chop the onion (1) and garlic (1) finely and sauté briefly in a pan with olive oil.
  • Then add the finely chopped carrot, broccoli and zucchini.
  • Deglaze with a little water and simmer for a good 5 minutes.
  • Remove the core and cut the red cabbage into thin strips, add and sauté for 2-3 minutes.
  • Season with fresh herbs and organic herb salt . Cook the pasta in the meantime. Arrange everything on a plate and garnish with a little oat cream cheese and fresh herbs.

For a low-carb version, you can use konjac noodles or homemade zucchini noodles, for example. For a gluten-free version, you can use rice noodles, for example.
