Cauliflower with hollandaise sauce
This low-histamine cauliflower with hollandaise sauce is perfect as a side dish or as a main course.

Ingredients for 2 servings
- 1 cauliflower
- 50 g butter
- 100 ml milk
- 3 egg yolks
- 2 tbsp acerol juice
- 4 tbsp spelt crumbs / breadcrumbs
- Salt
- 4-6 sprigs of fresh thyme

Simmer the cauliflower in a pot of water for a good 8-10 minutes.
For the Hollandaise sauce, melt 40g of butter in a saucepan, then let it cool briefly. - Whisk 3 egg yolks in a small saucepan until frothy, then slowly add the butter, milk and acerola juice over low heat, stirring constantly.
- Season with salt.
- Then, in a pan, toast the spelt crumbs together with the thyme in the remaining butter.
- Arrange everything and enjoy .
