Asian cucumber salad

Today we're having a creamy, low-histamine cucumber salad. This recipe is quick to prepare – and a delicious, Asian-inspired alternative to the usual cucumber salad. 

This recipe is

Preparation time 

15 minutes  

Ingredients for 1-2 people 

  • 1 cucumber 
  • Salt 
  • 1 handful of chopped almonds (1) 
  • Some fresh parsley 
  • 2 tbsp almond butter (1) 
  • 2 tablespoons acerola juice 

Cucumber salad with creamy almond-Asian sauce

preparation 

  • Wash the cucumber, quarter it lengthwise and cut it into bite-sized pieces. 
  • Wash and finely chop the parsley. 
  • Mix salt, almond butter, acerola juice, agave syrup, HistaFood Asian sauce and water to make a salad dressing and toss with the cucumbers. 
  • Serve with parsley and chopped almonds.

Alternatively, you can also prepare the recipe with other low-histamine vegetables such as carrots or pointed cabbage.
