Apple and red cabbage soup
A delicious starter for your low-histamine Christmas menu: red cabbage and apple soup.

Ingredients for 3-4 people
- 1 onion (1)
- 1/2 red cabbage (approx. 200 g)
- 100g potatoes
- 3 tbsp olive oil for cooking
- 1 L HistaFood Organic Vegetable Broth
- 20 g fresh ginger (1)
- 2 tart apples (e.g., Boskoop)
- 1 tsp ground coriander
- 2 tablespoons of honey
- 1 tbsp acerola juice
- Salt
Croutons
- 4 slices of HistaFood organic grain bread
- 30 g cooking olive oil
- ½ tsp cinnamon
preparation
- Peel and finely dice the onion.
- Wash, clean, and finely slice the red cabbage.
- Peel and dice the potatoes.
- Peel and dice the ginger.
- Wash, peel, core and dice the apples.
- Heat olive oil in a pot.
- Sauté onion, red cabbage, potatoes, ginger and apples in it.
- Add coriander, honey and acerola juice
- Briefly continue roasting and deglaze with HistaFood organic vegetable broth.
- Bring to a boil
- Simmer for about 20 minutes, until everything is cooked until soft.
- Purée the soup and season with salt.
- Cut HistaFood organic grain bread into cubes and toast in a pan with olive oil and cinnamon.
- Serve the soup with the croutons.
