Apple and red cabbage soup

A delicious starter for your low-histamine Christmas menu: red cabbage and apple soup.

Preparation time   

30 minutes  

Ingredients for 3-4 people  

  • 1 onion (1)  
  • 1/2 red cabbage (approx. 200 g)  
  • 100g potatoes  
  • 3 tbsp olive oil for cooking  
  • 1 L HistaFood Organic Vegetable Broth  
  • 20 g fresh ginger (1)  
  • 2 tart apples (e.g., Boskoop)  
  • 1 tsp ground coriander  
  • 2 tablespoons of honey  
  • 1 tbsp acerola juice  
  • Salt  

Croutons  

  • 4 slices of HistaFood organic grain bread  
  • 30 g cooking olive oil  
  • ½ tsp cinnamon  

Apple Red Cabbage Soup preparation  

  • Peel and finely dice the onion.  
  • Wash, clean, and finely slice the red cabbage.  
  • Peel and dice the potatoes.  
  • Peel and dice the ginger.  
  • Wash, peel, core and dice the apples.  
  • Heat olive oil in a pot.  
  • Sauté onion, red cabbage, potatoes, ginger and apples in it.  
  • Add coriander, honey and acerola juice  
  • Briefly continue roasting and deglaze with HistaFood organic vegetable broth.  
  • Bring to a boil  
  • Simmer for about 20 minutes, until everything is cooked until soft.  
  • Purée the soup and season with salt.  
  • Cut HistaFood organic grain bread into cubes and toast in a pan with olive oil and cinnamon.  
  • Serve the soup with the croutons.
