Zucchini is a subspecies of the garden squash. It therefore belongs to the gourd family. Although we usually know them as weighing between 100 and 300 grams, zucchini can grow larger and weigh up to 5 kilograms. Zucchini can be small or large, and also dark green, light green, or yellow, long or round. The taste is similar in all varieties: very mild and slightly nutty.

Zucchini are in season during the summer and can be harvested continuously from June to October. They should be stored in a cool, dark, and well-ventilated place, such as a cellar, pantry, or the vegetable drawer of your refrigerator. You can also freeze zucchini so you always have some on hand!

Zucchini is low in calories, contains few carbohydrates and very little fat. It is also rich in potassium, magnesium and iron.

Our tip: Before cooking, decide how much zucchini you need for your low-histamine meal and cut off only that portion. The remaining zucchini should be kept dry and stored in the refrigerator. This will keep it firm and fresh for longer.
If you have a more sensitive digestive system, simply peel the zucchini before processing.

When buying zucchini, be sure to choose organic. Fresh zucchini have a smooth skin and feel firm. Therefore, you should avoid zucchini that are flexible or have a wrinkled skin. Yellow zucchini are also excellent for a variety of low-histamine recipes.
