Beetroot belongs to the goosefoot family, just like chard or sugar beets. It's a great winter vegetable and can be used in many different ways – whether in salads, soups, roasted vegetables, or even desserts.

Beetroot is most in season during autumn and winter. It's best stored in a cool, dry place, such as a pantry or cellar. To keep smaller quantities fresh for longer, simply wrap them in a damp cloth and store them in the refrigerator. This way, they will keep for approximately two to three weeks.

Beetroot contains B vitamins such as folic acid and B6, vitamin C, iron, and antioxidants like betaine. It's also very high in fiber, yet low in calories and fat. Sounds great, right?

Yes, fresh beetroot is perfect for a low-histamine diet. So you can start looking for suitable recipes for the colder days and see how versatile beetroot can be in your low-histamine cooking. Incidentally, vacuum-packed beetroot is also generally well-tolerated. But be careful: beetroot from a jar often contains histamine-rich ingredients such as spirit vinegar, which is not well-tolerated. If you have problems with oxalic acid, you should also only consume beetroot in moderation.

This delicious winter vegetable is also perfect for a tasty carpaccio: add some fresh goat cheese, roasted pine nuts (1), olive oil, salt and a dash of acerola juice for acidity – and you have a low-histamine appetizer that is perfect for any time of year.

Caution when preparing: The red color of beetroot is very intense, so you should handle it carefully and wear gloves if possible to prevent color stains on your hands and clothes.
