Bread and histamine: buy or bake low-histamine bread
What kind of bread do you like best? Whole-grain, oat, rye, or perhaps wheat bread? Hardly any staple food is as versatile as bread. Are there also options suitable for a low-histamine diet?
The first bread was baked by the ancient Egyptians in special ovens around 6,000 years ago. It is very popular in Germany and is considered a staple food . Hardly any other country consumes as much bread as Germany. According to the Association for Cereal, Market and Nutritional Research (GMF), an average of about 87 kg of baked goods per person were consumed in 2021. But can bread and rolls also be eaten by people with histamine intolerance?
Is there such a thing as histamine-free bread?
Bread itself is not high in histamine, however, you should pay attention to the specific type of grain and any potentially histamine-rich ingredients. For example, the following should be avoided :
- Sunflower seeds/sunflower oil
- locust bean gum
- organic or dried yeast
- Baking ferment
Furthermore, the production process is another criterion, as airy breads are less suitable than denser varieties. Toasted bread or day-old bread are also better choices. Crispbread, rusks, corn cakes, or rice cakes can also be used.

Is spelt bread low in histamine?
Spelt is generally well tolerated by people with histamine intolerance, provided you can tolerate gluten. The following grains and pseudocereals are also considered low in histamine :
- Oats
- corn
- millet
- Quinoa
- rice
- amaranth
Coconut or flaxseed flour are also suitable for baking. However, they are considered to be rather high in histamine or not well tolerated.

Sourdough and histamine
The long fermentation process of sourdough increases its histamine content. Therefore, sourdough is not suitable for a low-histamine diet.
Does baking powder contain histamine?
Baking powder is not suitable for a low-histamine diet. Instead, you can use cream of tartar or baking soda as a leavening agent. Suitable binding agents include psyllium husks, chia seeds, and flax seeds.
