Beetroot roll

Quick, easy, delicious: This beetroot roll is ready in 20 minutes and impresses with creamy oat cream cheese, coconut yogurt, and herbs. Perfect as a light appetizer – fresh, healthy, and a real eye-catcher!

Ingredients  

  • 2-3 cooked beets
  • 150 g gluten-free oat cream cheese (1)
  • 2 tbsp coconut yogurt (1)
  • 2 carrots
  • 1 handful of chopped parsley
  • 1 clove of garlic (1)
  • HistaFood Organic Herb Salt
  • Some vegan feta (1) for garnish

Beetroot roll

preparation  

  • Slice the beetroot as thinly as possible.

  • Lay out in a rectangle on a sheet of cling film  

  • Mix oat cream cheese with coconut yogurt, parsley and garlic.  

  • Peel and grate the carrots, then briefly sauté them in a pan with a little water.  

  • Allow to cool and spread evenly over the cream cheese mixture.  

  • Carefully roll it up into a large roll

  • Garnish with parsley and feta and serve.

You can also fill the beetroot roll with feta cheese, cottage cheese or quark.
