Rhubarb iced tea

As soon as the weather gets warmer, we look for cool drinks. With this recipe, you can prepare a very tasty rhubarb iced tea that is also low in histamine. 

This recipe is 

  • vegetarian
  • suitable for a low-histamine diet 
  • lactose-free 
  • gluten-free 

Preparation time 

5 minutes + 1 hour cooking time 

Ingredients 

  • 500 g rhubarb (1)
  • 1 liter of water 
  • 2-3 tablespoons of honey 
  • 2 tbsp acerola juice 
  • A little fresh mint 
  • ice cubes 

preparation 

  • Wash, trim and cut the rhubarb (1) into pieces 
  • Bring rhubarb to a boil in a pot with 1 liter of water. 
  • Reduce heat to low and simmer for about an hour with the lid closed. 
  • Remove from heat, pour through a fine sieve and let cool. 
  • Then mix with honey and acerola juice 
  • Serve with fresh mint and ice cubes 

Our HistaFood tip

You can also pour any leftover iced tea into ice cube trays and serve it as ice cubes. For a vegan version, you can use rice syrup instead of honey.
