Rhubarb iced tea
As soon as the weather gets warmer, we look for cool drinks. With this recipe, you can prepare a very tasty rhubarb iced tea that is also low in histamine.

Ingredients
- 500 g rhubarb (1)
- 1 liter of water
- 2-3 tablespoons of honey
- 2 tbsp acerola juice
- A little fresh mint
- ice cubes

preparation
- Wash, trim and cut the rhubarb (1) into pieces
- Bring rhubarb to a boil in a pot with 1 liter of water.
- Reduce heat to low and simmer for about an hour with the lid closed.
- Remove from heat, pour through a fine sieve and let cool.
- Then mix with honey and acerola juice
- Serve with fresh mint and ice cubes

You can also pour any leftover iced tea into ice cube trays and serve it as ice cubes. For a vegan version, you can use rice syrup instead of honey.
