Minestrone

  • Wash and clean the vegetables
  • Finely dice the onions
  • Cut the bell peppers, carrots, zucchini and potatoes into bite-sized pieces.
  • Place the vegetables in a pot with one liter of HistaFood organic vegetable broth and bring to a boil with a bay leaf and cooking olive oil.
  • Simmer for another 20 minutes over medium heat.
  • Remove the soup from the heat and serve with fresh basil.
