Minestrone
How about a warming, low-histamine minestrone on these cold days? This recipe is quick to prepare and is guaranteed to please the whole family.

Ingredients for 3-4 people
- 1 red bell pepper
- 1 zucchini
- 1 carrot
- 2-3 potatoes
- 1 onion (1)
- 1 liter of HistaFood organic vegetable broth
- 4 tbsp olive oil for cooking
- basil
- 1 bay leaf

preparation
- Wash and clean the vegetables
- Finely dice the onions
- Cut the bell peppers, carrots, zucchini and potatoes into bite-sized pieces.
- Place the vegetables in a pot with one liter of HistaFood organic vegetable broth and bring to a boil with a bay leaf and cooking olive oil.
- Simmer for another 20 minutes over medium heat.
- Remove the soup from the heat and serve with fresh basil.
