Date cookies
These date cookies with spelt flour and cinnamon are quick to bake and perfect for the pre-Christmas season. Simple, delicious, and ideal for cozy Advent afternoons!

Ingredients
- 230 g spelt flour
- 90 g coconut oil
- 1 pinch of salt
- 50 g water
- 1 tsp cinnamon
- 5 g cream of tartar baking powder (1)
- 250 g date paste

preparation
- Knead spelt flour, coconut oil, salt, water, cinnamon and cream of tartar baking powder (1) into a dough.
- Roll out into a rectangle on a floured work surface or baking paper.
- Spread the date paste evenly on the baking paper using moistened hands.
- Preheat oven to 180°C (top/bottom heat).
- Roll out the dough and cut it into slices.
- Roll out the discs and shape them into rings.
- Place on a baking sheet lined with baking paper and bake in a preheated oven for approximately 12-15 minutes.
- Remove from the oven and let cool.
- Do not bake the cookies for too long, otherwise the date paste will become hard.
