This creamy, soft, low-histamine burrata with blackcurrant dressing and spring onions is not only a delicious appetizer, but also fits perfectly on the breakfast table.

- 1 spring onion (1)
- 1 handful of sprouts (here pea shoots)
- 2 tbsp blackcurrant juice
- 2 tbsp olive oil
- 1/2 tsp honey
- Salt

- For the dressing, mix the currant juice, olive oil, salt and honey and pour onto the plate.
- Add the burrata and garnish with spring onion and sprouts. A delicious roll or bread goes perfectly with this.
