Roast chicken with red cabbage and apple-chestnut vegetables
Crispy, juicy chicken, spicy red cabbage and the sweet apple and chestnut vegetable – a real feast, not just at Christmas.

Ingredients for 2 servings
- 2 chicken drumsticks
- 1 pack of chestnuts (pre-cooked)
- 1-2 apples
- 1 onion (1)
- 2 garlic cloves (1)
- 1/2 red cabbage
- 1 cinnamon stick
- 5 cloves
- 1 star anise
- 2 bay leaves
- 300 ml apple juice
- 100 ml acerola juice
- rosemary
- Olive oil

preparation
- Wash the chicken, place it on a baking tray and rub it with a marinade made from olive oil, organic herb salt and garlic (1).
- Add the chestnuts together with chopped apples, onion (1), some olive oil, water and organic herb salt as well as the rosemary and cook everything for about 40 minutes at 190 degrees in a preheated oven.
- Meanwhile, finely chop the red cabbage and simmer it with the spices (cinnamon, anise, cloves and organic herb salt ) in a little apple juice and acerola juice for about 15 minutes.
- Then remove the spices, arrange everything on a plate and enjoy.
