Cauliflower balls with herbed quark

Crispy on the outside and delicately spiced on the inside. The perfect appetizer for low-histamine moments of enjoyment.

Ingredients for 2 servings

  • 1 cauliflower
  • 1 large onion (1)
  • 4 tablespoons gluten-free rolled oats
  • 2 eggs (1)
  • 3 tablespoons olive oil
  • 100g grated mozzarella
  • 2 cloves of garlic (1)
  • 1 tsp turmeric
  • HistaFood Organic Herb Salt
  • 1/2 pack of quark
  • Herbs as desired (here basil and coriander)
  • Sesame (1)
  • Spring onion (1)

Optional as a dip

preparation

  • Grate the cauliflower finely and squeeze it firmly in a kitchen towel until no more water comes out.
  • Then mix together with a finely chopped onion (1) and the garlic (1), mozzarella, the oat flakes, the eggs (1), turmeric and organic herb salt.
  • Form small balls from the mixture and bake in a preheated oven at 180 degrees for about 30 minutes, until golden brown and slightly crispy.
  • Meanwhile, puree the quark with fresh herbs and add salt.
  • Toast the sesame seeds (1) in a pan.
  • Arrange everything on a plate and garnish with spring onion (1).

Our HistaFood tip

Instead of basil and coriander, you can also use other herbs for the herb quark, such as parsley and chervil, or wild herbs such as dandelion leaves and ribwort plantain.
