Black Sticky Rice with Mango

This black sticky rice with mango, pomegranate, and pumpkin seed brittle is not only delicious but also incredibly healthy. Studies have shown that black rice has mast cell-stabilizing properties, which in turn lowers histamine levels. Delicious, right?!

Ingredients for 2 servings

  • 100g black rice
  • 4 tablespoons maple syrup
  • 1/2 Mango (1)
  • 1/4 pomegranate seeds
  • 1 tbsp coconut oil
  • 1 tbsp coconut blossom sugar
  • 2 tablespoons ground pumpkin seeds

preparation

  • Cook the rice according to the instructions, then mix with maple syrup, chopped mango and pomegranate seeds.
  • For the pumpkin seed brittle, heat the coconut oil in a pan, briefly roast the seeds and then caramelize them together with the coconut blossom sugar.
  • Arrange everything on a plate and enjoy.

For a low-fructose version, simply replace the maple syrup with rice syrup, the powdered sugar with dextrose, and the vanilla pudding with cornstarch and a little vanilla (1). Our organic fruit spread or our organic protein spread also make excellent toppings.
