Apple and carrot breakfast muffins

With this low-histamine recipe for delicious apple and carrot muffins, you can whip up a quick and satisfying breakfast. Perfect for on the go or for the office.

Preparation time 

15 minutes + baking time 25 minutes 

Ingredients for 12 muffins 

  • 2 carrots (approx. 150g) 
  • 2 apples (approx. 150g) 
  • 300g Gluten-free oat flour (1)
  • 80g coconut blossom sugar 
  • 4 tsp cream of tartar baking powder (1)
  • 1 pinch of salt 
  • 2 tsp cinnamon 
  • 120g apple puree 
  • 80ml rapeseed oil 
  • 80ml Gluten-free oat milk (1)

Topping: 

Apple and carrot breakfast muffins (histamine) preparation 

  • Peel and finely grate the carrots and apples. 
  • Preheat oven to 180°C (top/bottom heat). 
  • Add all other ingredients except for the HistaFood grain bars and mix. 
  • Divide the batter into 12 muffin cups. 
  • Finely chop HistaFood organic grain bars and distribute them over the muffins. 
  • Bake in a preheated oven for approximately 25 minutes.
