Carrot fritters with herb quark
Have you ever tried carrot fritters? They're super delicious, low in histamine, and perfect as a snack or meal prep to go.

Ingredients for 2 people
Carrot discs:
- 500g carrots
- 75ml water
- 150g spelt flour
- Salt
- Olive oil for frying
Herb quark:
- 250g quark
- ½ bunch of parsley
- HistaFood Organic Herb Salt

preparation
- Peel and finely grate the carrots.
- Knead with water, flour and salt and form into small balls.
- Heat some olive oil in a pan and fry the carrot cakes until golden brown on both sides.
- Wash and finely chop the parsley.
- Mix with quark and season with HistaFood organic herb salt.
- Serve carrot fritters with herbed quark.

If you want to prepare the cookies gluten-free, you can use 150g of tender gluten-free rolled oats instead of 150g of spelt flour.
