Onion marmalade with goat cheese

This low-histamine onion marmalade is perfect as an appetizer or as part of a low-histamine cheese platter.

Ingredients for 2 servings

  • 3 medium-sized yellow (1) or white onions
  • 1 tbsp coconut blossom sugar
  • 2 tbsp maple syrup
  • 2 tbsp organic Asian sauce
  • 2 tbsp acerola juice
  • 3 sprigs of thyme
  • 100 ml water
  • Salt
  • Olive oil
  • Young goat cheese, here a goat cheese log (1) – Note: possibly with white/noble mold (2), here cut off the edge if necessary / test carefully or use fresh goat cheese
Onion marmalade with goat cheese

preparation

  • Peel the onions and cut them into rings.
  • Heat a little olive oil in a small saucepan and fry the onions (1) slowly until they are lightly golden brown.
  • Then add the remaining ingredients and simmer on low heat for about 10 minutes.
  • Arrange everything on a plate and enjoy with young goat cheese.
