Zucchini Baba Ghanoush

Ingredients
- 2 zucchini
- 3-4 tablespoons olive oil
- A little HistaFood organic herb salt
- 3 tbsp tahini (1)
- 2 tbsp acerola juice
- 2 tbsp coconut yogurt (1)
- 1 clove of garlic (1)
- 1 handful of pomegranate seeds
- 1 handful of roasted, chopped pistachios

preparation
- Cut the zucchini into large cubes.
- Mix with olive oil for frying and roast in a preheated oven at 220°C (top/bottom heat) for about 20 minutes.
- Remove from the oven and place in a blender with tahini, acerola juice, coconut yogurt, and a peeled clove of garlic, and blend until smooth.
- Serve with pomegranate seeds, pistachios and HistaFood organic herb salt.
