Zucchini Baba Ghanoush

Ingredients

  • 2 zucchini  
  • 3-4 tablespoons olive oil  
  • A little HistaFood organic herb salt  
  • 3 tbsp tahini (1)  
  • 2 tbsp acerola juice  
  • 2 tbsp coconut yogurt (1)  
  • 1 clove of garlic (1)  
  • 1 handful of pomegranate seeds  
  • 1 handful of roasted, chopped pistachios  
Zucchini Baba Ghanoush

preparation

  • Cut the zucchini into large cubes.
  • Mix with olive oil for frying and roast in a preheated oven at 220°C (top/bottom heat) for about 20 minutes.
  • Remove from the oven and place in a blender with tahini, acerola juice, coconut yogurt, and a peeled clove of garlic, and blend until smooth.
  • Serve with pomegranate seeds, pistachios and HistaFood organic herb salt.
