Sweet rice paper crepes

These rice paper crepes are low in histamine, vegan, and gluten-free! They are quick to prepare and perfect for your next luxurious breakfast.

Preparation time   

20 minutes  

Ingredients for 1-2 people  

  • 4 rice papers  
  • 200 ml Gluten-free oat milk (1)  
  • 3 tablespoons maple syrup  
  • A little cinnamon  

filling  

  • 2 apples  
  • 3 tablespoons maple syrup  
  • Cinnamon  
  • 1 tbsp starch (corn or potato)  

Topping  

  • 100 g coconut yogurt (1)  
  • Chopped almonds (1)  
  • some maple syrup  
  • 1 handful of blueberries  

Rice paper crepes preparation   

  • Peel, core, and finely dice the apples.  
  • Bring to a boil in a pot with a little water and maple syrup.  
  • Simmer for about 10 minutes.  
  • Mix a little water with 1 tablespoon of starch in a cup and add to the apple compote.  
  • Bring back to a boil and remove from heat.  
  • In a bowl, mix oat milk with maple syrup and a little cinnamon.  
  • Dip two rice paper sheets briefly in the solution and then place them on top of each other in a pan.  
  • Briefly sear on both sides  
  • Place rice paper crepes on a plate, fill with apple compote and roll them up.  
  • Serve with coconut yogurt, chopped almonds, maple syrup and some blueberries.  

Our HistaFood tip 

For a low-fructose version, you can replace the maple syrup with rice syrup. Instead of apple compote, you can prepare blueberry compote. For this, use approximately 200-300 g of blueberries instead of 2 apples.
