Asparagus pasta

Asparagus season is finally here! This creamy pasta with asparagus is sure to become your new favorite low-histamine asparagus recipe!

Ingredients for 2 servings

  • 200g spelt pasta
  • 500 g white asparagus
  • 2 small onions (1)
  • 40g young Gouda (finely grated)
  • 150 g whipped cream
  • 20 g butter
  • 4 sprigs of flat-leaf parsley
  • 4 stalks of tarragon
  • 2 tsp capers in brine (1)
  • Organic herb salt

preparation

  • Peel the asparagus and cut off the ends.
  • Cut the asparagus into large pieces and cook in boiling salted water for about 5-6 minutes.
  • Remove the asparagus and rinse it under cold water.
  • Measure out 150ml of the cooking water and set it aside.
  • Cook spelt pasta according to the package instructions.
  • Finely dice the onions (1).
  • Melt the butter in a pan and sauté the onion until translucent.
  • Add asparagus, capers, asparagus water and cream.
  • Season with organic herb salt .
  • Simmer the sauce over high heat until creamy.
  • Add the Gouda and the cooked pasta.
  • Serve with finely chopped parsley and tarragon.
