Spaghetti with Ricotta & Pistachios

Creamy, nutty, and full of flavor. These spaghetti with pistachios and ricotta are a simple comfort food dish. Quick to prepare and perfect for a relaxed lunch or dinner.

Ingredients for 2-3 servings

  • 300 g spelt spaghetti 

  • 2 tbsp frying olive oil 

  • 1 onion (1) 

  • 80 g chopped pistachios 

  • 100 g ricotta 

  • 40 g grated mozzarella

Preparation

  • Cook spaghetti according to package directions 

  • Peel and finely chop the onion 

  • Heat frying olive oil in a pan and sauté the onion 

  • Add ricotta, a little pasta water, and mozzarella 

  • Stir the sauce well and let it simmer. 

  • Drain the pasta and stir into the sauce 

  • Season with Organic Herb Salt 

  • Arrange on a plate and serve with chopped pistachios

You can also use gluten-free pasta for this recipe. For more pistachio flavor, you can add 1 tbsp pistachio butter to the sauce.
