Moist ricotta apple cake
Who can say no to a juicy and deliciously fragrant slice of apple pie? You'll love this easy and quick-to-bake apple ricotta pie.

Preparation time
20 minutes – Baking time: 60 minutes
Ingredients
- 250g spelt flour
- 150g Ricotta
- 1 kg of tart apples, e.g. Boskoop
- 4 egg yolks
- 200g coconut sugar
- 200g butter
- 4 tablespoons acerola juice
- 1 tsp cream of tartar baking powder
- 26cm springform pan

preparation
- Peel, quarter, and core the apples.
- Cut several lengthwise slits in the top of each apple quarter and drizzle with acerola juice.
- Preheat oven to 180°C (top/bottom heat).
- Cream together coconut blossom sugar and softened butter, then gradually add all the other ingredients.
- Grease a springform pan well and sprinkle with spelt flour.
- Pour the batter into the springform pan and press the apple pieces into the batter.
- Bake for approximately 60 minutes.
- Serve with powdered sugar, if desired.

You can also add 1 teaspoon of cinnamon to the dough. It goes perfectly with the apple and smells wonderful.
