Moist carrot and pumpkin seed cake
Grated carrots and ground pumpkin seeds make this pound cake wonderfully aromatic – easy to make and incredibly delicious.

Ingredients for a springform pan (approx. 24cm)
For the dough
- 375 g carrots - peeled and finely grated
- 250g gluten-free flour of your choice
- 2 tsp cream of tartar baking powder
- 100g agave syrup or another sweetener of your choice
- 250 ml neutral oil
- 4 eggs (1)
- 200 g pumpkin seeds – finely ground
For the frosting
- 150 g cream cheese
- 100 g icing sugar
- 2 tablespoons of water

preparation
- Preheat the oven to 180 °C (top/bottom heat).
- Line a springform pan (approx. 24 cm) with baking paper or grease it.
- Peel and finely grate the carrots.
- Grind the pumpkin seeds or chop them in a blender.
- In a large bowl, thoroughly mix the carrots, eggs (1), agave syrup and oil.
- Mix the flour and cream of tartar baking powder and stir into the egg mixture until a smooth dough is formed.
- Fold in the grated carrots and pumpkin seeds.
- Pour the dough into the prepared pan and bake in a preheated oven for approximately 40-50 minutes.
- Do the toothpick test: If no batter sticks to it, the cake is ready.
- Allow the cake to cool completely.
glaze
- Put cream cheese, powdered sugar and water into a bowl and mix until smooth.
- Spread the frosting evenly over the cooled cake.
- Decorate with a few extra pumpkin seeds or grated carrots, if desired.
