Oven-roasted vegetables with herbed yogurt

Simple and delicious: Oven-roasted vegetables are super easy to prepare and can be made with all low-histamine vegetables.

Ingredients for 2 servings

  • 6 potatoes (various colors)
  • 2 zucchini
  • 1 chicory
  • Olive oil
  • 200 g coconut yogurt (1)
  • 2 tbsp olive oil
  • 1 handful of basil
  • 1 handful of parsley
  • HistaFood Organic Herb Salt

preparation

  • Chop the vegetables into small pieces and marinate them with a little oil and salt.
  • Then cook in the oven at 180 degrees for about 40 minutes.
  • For the dressing, mix the coconut yogurt (1) with olive oil, finely chopped basil and parsley and season with organic herb salt .
  • Arrange everything on a plate and enjoy.
