Rice pudding gratin with cherries

Who can say no to warm rice pudding? You absolutely must try this low-histamine rice pudding gratin with cherries, because you'll love it!

Ingredients for 2 people

  • 300 ml gluten-free oat milk (1)
  • 75 g rice pudding
  • ½ packet of vanilla sugar (1)
  • 3½ tablespoons coconut blossom sugar
  • 2 egg yolks
  • ½ pinch of salt
  • 75 g frozen cherries
  • 10 g flaked almonds (1)
  • Coconut oil for the mold

Rice pudding gratin with cherries

preparation

  • Bring gluten-free oat milk (1) and salt to a boil in a saucepan.
  • Add rice pudding, vanilla sugar and 1 tbsp coconut blossom sugar and bring to a boil again.
  • Simmer gently for another 25 minutes, stirring occasionally.
  • Turn off the stovetop and let the rice pudding rest for 15 minutes.
  • Quickly mix 2 tablespoons of rice pudding with 2 egg yolks and then mix with the remaining rice.
  • Place the rice pudding in a greased small casserole dish.
  • Distribute the cherries on top and sprinkle with 2.5 tablespoons of sugar.
  • Bake in a preheated oven at 175°C.
  • After about 25 minutes, sprinkle with almond flakes and bake for another 5 minutes.
  • Serve warm or cold
