Rice pudding gratin with cherries
Who can say no to warm rice pudding? You absolutely must try this low-histamine rice pudding gratin with cherries, because you'll love it!

Ingredients for 2 people
- 300 ml gluten-free oat milk (1)
- 75 g rice pudding
- ½ packet of vanilla sugar (1)
- 3½ tablespoons coconut blossom sugar
- 2 egg yolks
- ½ pinch of salt
- 75 g frozen cherries
- 10 g flaked almonds (1)
- Coconut oil for the mold

preparation
- Bring gluten-free oat milk (1) and salt to a boil in a saucepan.
- Add rice pudding, vanilla sugar and 1 tbsp coconut blossom sugar and bring to a boil again.
- Simmer gently for another 25 minutes, stirring occasionally.
- Turn off the stovetop and let the rice pudding rest for 15 minutes.
- Quickly mix 2 tablespoons of rice pudding with 2 egg yolks and then mix with the remaining rice.
- Place the rice pudding in a greased small casserole dish.
- Distribute the cherries on top and sprinkle with 2.5 tablespoons of sugar.
- Bake in a preheated oven at 175°C.
- After about 25 minutes, sprinkle with almond flakes and bake for another 5 minutes.
- Serve warm or cold
