Turnip carpaccio with fresh goat cheese and parsley oil

Ingredients for 2 servings

For the carpaccio

  • 4 turnips
  • 1/4 bunch of radishes
  • 50 g cress
  • 150 g fresh goat cheese

For the dressing

  • 2 tbsp acerola juice
  • 3-4 sprigs of parsley
  • 4 tablespoons olive oil
  • ¼ tsp honey
  • Salt

preparation

  • Wash, peel, and thinly slice or shave the turnips and radishes.
  • Arrange the thin turnip slices in a round on a plate and top with the radishes.
  • Distribute goat's milk cheese and cress.
  • For the dressing, blend acerola juice, parsley, olive oil, honey and salt with an immersion blender.
  • Spread over the carpaccio and serve.
