Macadamia oat cookies
You absolutely have to try these low-histamine macadamia oat cookies! They're very quick to prepare and perfect as a sweet snack!

Ingredients for 2 servings
For the cookies
- 100g gluten-free rolled oats
- 20 g gluten-free oat flour
- Chop 50g of macadamia nuts in a blender.
- 6 tablespoons maple syrup
- 2 tbsp almond butter (1) or organic protein spread pumpkin seed & pistachio
- 1 pinch of salt
As an egg substitute
- 1 tablespoon flaxseed flour
- 3 tablespoons of water

preparation
- Mix together gluten-free rolled oats, gluten-free oat flour, crushed macadamia nuts, maple syrup, almond butter or organic protein spread and a pinch of salt.
- Mix flaxseed flour with water and add to the oat flake mixture.
- Shape cookies with moistened hands and bake on a baking sheet lined with baking paper for about 10-15 minutes at 200 degrees Celsius (top/bottom heat) until golden brown.

For a low-fructose version, you can simply use rice syrup instead of maple syrup.
