Cabbage rolls with potato and parsnip mash and vegetable sauce
Although a bit more elaborate to prepare, it's worth it: These low-histamine cabbage rolls with potato and parsnip mash and vegetable sauce are really delicious.

Ingredients for 2 servings
For the roulade
- 1/2 white cabbage (approx. 12 leaves)
- 250 g ground beef
- 1 onion (1)
- 2 egg yolks
- Salt
- 400ml water
For the mash
- 1 parsnip
- 6-8 potatoes
- 20 g butter
- 100 ml milk
- Salt
- 1 liter of water
- 2 sprigs of parsley
For the sauce
- 1 bell pepper
- 1/2 zucchini
- 1 carrot
- 1 onion (1)
- 2 cloves of garlic (1)
- 300 ml water
- 50 ml beetroot juice
- 50 ml cream
- Olive oil
- Organic herb salt

preparation
For the cabbage rolls
- Carefully separate about 12 cabbage leaves, cut away the stem in a V-shape and blanch in boiling water for a good 2-3 minutes, then let it drain briefly on a tea towel.
- For the minced meat filling, peel and dice the onion (1).
- Then mix with the minced meat, egg yolk and salt and form 4 oblong meatballs.
- Place one meatball on each cabbage leaf, roll them up into a roulade and secure with kitchen twine.
- Brown the roulades in a pot with olive oil, then add some water and simmer for 30 minutes.
For the mash
- Peel the potatoes and parsnip, chop them into small pieces and cook them in 1 liter of water for about 20 minutes.
- Then drain the water. Mash together with some butter, salt and milk.
For the sauce
- Chop the vegetables and fry them in a pot with oil, then deglaze with water and beetroot juice and cook for a good 15 minutes.
- Then blend with a little cream and refine with organic herb salt .
