Chicken soup with vegetables and black rice noodles
This low-histamine chicken soup with vegetables and black rice noodles is perfect for the cold season: it is not only delicious, but also warms you from the inside out.

Ingredients for 2 servings
- Black rice noodles
- 2 chicken thighs (organic)
- 1 stalk of celery
- 1/2 broccoli
- 6 small red and yellow pointed peppers
- 4 carrots
- 4 spring onions (1)
- 1/2 tsp turmeric powder
- 1 handful of fresh herbs (here Thai basil)
- 1 liter of water
- Salt

preparation
- Rinse the chicken thighs with water and cook them in a pot of water for about 20 minutes.
- Then remove, detach the meat and simmer together with the vegetables for another 5 minutes, then add the rice noodles and cook according to the instructions.
- Season with salt and turmeric powder and enjoy.
