Fried salad with sweet potato mash

Ingredients for 2 servings

For the sweet potato mash

  • 1-2 sweet potatoes
  • 1 tbsp coconut oil
  • 100ml gluten-free oat milk (1)
  • Salt

For the fried salad

  • 1 head of lettuce (here, lettuce)
  • 1 onion (1)
  • 1 clove of garlic (1)
  • 3 tbsp organic Asian sauce
  • 1 tbsp coconut oil
  • 50 ml water
  • 1 tbsp black sesame seeds (1)
  • 2-3 sprigs of coriander
  • Salt
Fried salad with sweet potato mash

preparation

  • Peel the sweet potatoes, cut them into small pieces and cook them in a pot of water for a good 10 minutes, then refine with coconut oil, milk and salt and mash.
  • Meanwhile, finely chop the lettuce, onion (1) and garlic (1) and sauté them in a pan with a little coconut oil.
  • Deglaze with organic Asian sauce and water, and season with salt.
  • Arrange everything on a plate and garnish with sesame seeds and fresh coriander.
