Baked sweet potato with vegan feta and corn

Ingredients for 2 servings
- 2 sweet potatoes
- 1 pack of vegan feta (1)
- 1/2 can of corn or frozen
- 2-3 sprigs of fresh parsley
This goes well with that

preparation
- Prick the baked potatoes with a fork, then cook in a preheated oven at 200 degrees for a good 40 minutes, then halve them, add the vegan feta (1) and bake for another 20 minutes.
- Refine with corn, fresh parsley and some organic vegetable spread carrot & beetroot .

If you don't tolerate canned corn very well, you can either 1. rinse the corn with a little water or 2. use frozen corn. If using frozen corn, please bake it for a good 20 minutes.
