Date Rice Pop Balls

Ingredients
- 100g Medjool dates
- 40 ml rice syrup
- 40g puffed rice, or alternatively rice cakes
- 40ml coconut oil
Toppings as desired, e.g.
- Freeze-dried blueberries
- Sesame (1)
- Chia seeds
- White chocolate shavings (1)
preparation
- Pit the dates and finely purée them with a small splash of water.
- In a bowl, mix date puree, rice syrup and puffed rice with the melted coconut oil.
- If you are using rice cakes instead, roughly crush them by hand and mix them with the remaining ingredients.
- Moisten your hands with water and form small balls.
- Decorate the balls with the toppings as desired and then let them set briefly in the refrigerator.
