Chicken Tikka with Asparagus

Ingredients for 2 servings

  • 200 g basmati rice
  • 1 large organic chicken breast
  • 1 large onion (1)
  • 1 thumb-sized piece of ginger (1)
  • 1 jar of organic vegetable sauce
  • A splash of milk
  • Salt
  • Green and white asparagus to taste
  • A little butter for frying
  • Fresh parsley for garnish
Chicken Tikka with Rice & Asparagus

Preparation

  • Cook the basmati rice according to package instructions.
  • Cut the organic chicken breast into pieces.
  • Dice the onion (1) and grate the ginger.
  • Add a little butter, along with the onion (1), ginger (1), the organic vegetable sauce, and a splash of milk to a pot and simmer for about 8–10 minutes over medium heat. Season with salt.
  • Cut green and white asparagus (peel) into pieces and briefly fry in a separate pan until lightly browned.
  • Arrange rice on a plate, add chicken tikka next to it, and serve with asparagus.
  • Garnish with fresh parsley and enjoy warm.
