Colorful baked rice with vegetables

A creamy and delicious low-histamine rice dish with fresh roasted vegetables. This recipe is also perfect for using up leftover colorful vegetables.

Ingredients for 2 servings

  • 200g basmati rice
  • 1/2 broccoli
  • 3 carrots
  • 2 bell peppers
  • 2 spring onions (1)
  • 2 cloves of garlic (1)
  • ½ bunch of parsley
  • 400 ml gluten-free oat cream (1)
  • 2 tbsp organic vegetable broth
  • 1 tsp turmeric
  • Salt

preparation

  • Wash the basmati rice and place it in a casserole dish.
  • Wash and chop the vegetables. Add broccoli, carrots, bell peppers, spring onion (1) and garlic (1) to the basmati rice.
  • Distribute 2 tablespoons of organic vegetable broth , 1 teaspoon of turmeric and salt over the vegetables.
  • Finally, spread the gluten-free oat cream (1) over the top and bake in a preheated oven at 200 degrees top/bottom heat for about 40 minutes.
  • Serve with fresh, finely chopped parsley.
