Apple sheet cake

This sheet pan apple cake is not only suitable for a low-histamine diet, it's also super quick and easy to prepare. It tastes delicious both warm and cold!

Ingredients for 10 pieces (1 small baking tray approx. 40x36cm)

  • 1 kg apples
  • 187 g spelt flour
  • ½ packet cream of tartar baking powder
  • 50 g butter
  • 2 tablespoons of milk
  • 200g whipping cream
  • 125 g coconut blossom sugar
  • 4 egg yolks
  • ½ packet vanilla sugar (1)
  • 75 g almond slivers (1)
  • Butter for the baking tray

preparation

  • Peel, quarter, and core the apples.
  • Cut the apple quarters lengthwise in a fan shape.
  • Whip the heavy cream, 62.5g of sugar and vanilla sugar until stiff peaks form. Gradually whisk in the egg yolks.
  • Mix together spelt flour and cream of tartar baking powder, sift over the dough and gently stir in.
  • Grease a baking tray with butter and spread the dough on it.
  • Arrange the apples on the cake with the fan side facing up.
  • Bake the cake in a preheated oven at 175 °C for approximately 15 minutes.
  • Meanwhile, heat the remaining sugar with 50g butter, 2 tablespoons of milk and 75g slivered almonds in a pan and stir until the sugar melts.
  • After 15 minutes, remove the cake and spread the almond mixture on top of the cake.
  • Bake for another 15 minutes
