Apple Carrot Muffins
Juicy, slightly sweet, and wonderfully aromatic. These apple carrot cupcakes are an uncomplicated treat for every day. They are quick to prepare and perfect as a snack, breakfast, or a small sweet treat in between meals.

Preparation time

Ingredients for 6-8 servings
- 400 g rice flour
- 8 tbsp applesauce
- 1/2 apple
- 2 carrots
- 4 tbsp rapeseed oil
- 150 ml water
- 4 tbsp coconut blossom sugar
- 1 cream of tartar baking powder
- 1 pinch of salt
Topping
- Almond slivers (1)
- 2 tbsp powdered sugar
- approx. 1-2 tsp water

Preparation
- Grate the apple and carrots finely, then mix with the rice flour, applesauce, rapeseed oil, water, coconut blossom sugar, baking powder, and a pinch of salt until a medium-firm mixture is formed.
- Fill the dough into small molds and bake in a preheated oven at 180 degrees Celsius for approx. 20-30 minutes.
- Let cool briefly, mix the powdered sugar with a little water until smooth, and brush it on.
- Decorate with almond slivers.
