Apple Carrot Muffins

Juicy, slightly sweet, and wonderfully aromatic. These apple carrot cupcakes are an uncomplicated treat for every day. They are quick to prepare and perfect as a snack, breakfast, or a small sweet treat in between meals.

Preparation time

30 minutes

Ingredients for 6-8 servings

  • 400 g rice flour
  • 8 tbsp applesauce
  • 1/2 apple
  • 2 carrots
  • 4 tbsp rapeseed oil
  • 150 ml water
  • 4 tbsp coconut blossom sugar
  • 1 cream of tartar baking powder
  • 1 pinch of salt

Topping

  • Almond slivers (1)
  • 2 tbsp powdered sugar
  • approx. 1-2 tsp water

Preparation

  • Grate the apple and carrots finely, then mix with the rice flour, applesauce, rapeseed oil, water, coconut blossom sugar, baking powder, and a pinch of salt until a medium-firm mixture is formed.
  • Fill the dough into small molds and bake in a preheated oven at 180 degrees Celsius for approx. 20-30 minutes.
  • Let cool briefly, mix the powdered sugar with a little water until smooth, and brush it on.
  • Decorate with almond slivers.
