Apple Kaiserschmarrn with persim

Ingredients for 2 servings

For the Kaiserschmarrn

  • 150 g spelt flour
  • 250 ml plant milk (1)
  • 2 egg yolks
  • 6 dates
  • 1 pinch of salt
  • 1-2 apples
  • 30 g butter for frying

As a side dish

  • 2 persimmons
  • 1/2 tsp cinnamon

preparation

  • Mix the ingredients for the dough (flour, milk, egg yolk and salt) and let it rest briefly.
  • Meanwhile, cut the apple into small pieces and briefly fry them in a pan with butter.
  • Then add the batter and chopped dates and fry over low to medium heat on both sides until it has a nice golden brown color.
  • Use a spatula to cut the dough into small pieces and fry briefly.
  • Chop the persimmon into small pieces, arrange everything on a plate and season with cinnamon.
