Soy: A Versatile Food
Up to 5 beans grow in the 2-10 centimeter long pods of the plant. Depending on the variety, they can be yellow, white, green, brown, or black-violet. Due to their protein content, soybeans offer a perfect base for many different foods, such as tofu, soy oil, soy yogurt, soy sauce, soy milk, or even soy noodles. By the way, soy noodles are also an excellent gluten-free noodle alternative.
However, since many countries use genetically modified seeds when growing soybeans, it is advisable to opt for organic products.
Histamine Content in Soy Products
Soybeans belong to the legumes. These are considered histamine liberators, which promote the release of histamine in the body. Therefore, they are unsuitable for a low-histamine diet. This also applies accordingly to all products made from soy. Soy lecithin, on the other hand, is tolerated in moderation now and then, but one should approach it cautiously. Lecithin is a substance composed of fatty acids, glycerol, phosphoric acid, and choline. Soy lecithin is accordingly lecithin obtained from soybeans and is often labeled as E322 on products.
